This is how I started my Earth Day today.
At the beach with an apple muffin, a very large coffee,
and my little boy.
Then my feet got buried.
After a trip to the store for organic soil and cow poop,
we had toasted peanut butter sandwiches for lunch
with organic applesause and chedder crackers. YUM!
Of course our little "Evander Holyfield" joined us with a smile on his face
Then it was time to unload the truck.
Note to self:
Don't lift 50 lb bags of composted cow poop
when your back hurts.
As you can see , he was already tired.
So guess who did the rest of the work?
It doesn't look like much, but it will have a play
area surrounded by huge sunflowers,
baby cucumber to make pickles,
radishes, carrots, lettuce,
and his very own tomato plant.
These are my sunflowers that I started about a month ago.
On either side are watermelons and cantelopes.
Hopefully we will have some fruit going by the time Bee gets here.
Then we made our first batch of
homemade organic lemonade.
recipe is below.
It was so tart and yummy!
And of course I don't have a picture of us at the movies. We went to see the Disney movie "Oceans". Well worth the money!! It was amazing!! And he fell asleep on the way home. We both were exhausted. I am off to bed myself, here is your Earth Day Lemonade recipe:
Earth Day Lemonade
1 cup freshly squeezed organic lemon juice
2/3 cup light agave syrup
4 cups ice water
mint leaves (optional)
mix together and serve over ice to cool off after planting your garden!

I love tart lemonade. Mmmmm.
i'm going to miss my garden! i think i'll still be able to plant a few herbs and tomatoes.
i got some agave syrup today and loved it. you'll have to tell me how to use it in recipes instead of regular sugar.
