Healthy Recipe Tuesday...or Thursday

I have been really busy so I haven't had time to post anything. We are almost done with Bee's room, just waiting on a couple things to come in the mail. It is so cute and I can't believe that I will have a baby in there soon. I received some gifts for her in the mail from some of my blog readers. Thank you so much Rita and Amber!!! They are so cute!! It amazes me how many awesome people I have met (or not met)through my blog. I am also getting ready for my shower next week and more importantly my visit with my friend Sue and her son Cohen. I can't wait. We also sent out our 4th care package to our little Bee. It included some Valentine's Day gifts for her foster mother.



Last week I found out that our agency is closing their Florida office due to lack of new parents applying to adopt internationally. It makes me really sad because it means we will no longer have our social worker and her support and no one locally to contact from our agency. It is a little scary, but our agency will be having a social worker in Illinois contact us and continue with our case. So we are headed to Sarasota to take our social worker out to lunch and say goodbye.



Riley and I have been doing our homeschool in the mornings and are having so much fun. We play, color, cut and paste, learn letters and numbers, watch learning DVDs, dance, and read a lot of books together. And then when it is time for lunch I get the best reward when he says, " Mommy, I love you. You are so much fun." I absolutely love my little boy. I can't get enough of him. We also made pumpkin doughnuts yesterday morning and that is my recipe today.




Pumpkin Doughnuts
1 c organic spelt flour
1/4 c wheat germ
1/2tsp baking powder
1 tbsp baking soda
1/2 tsp cinnamon
1/4 tsp ginger
1/4 tsp nutmeg
1/8 tsp ground cloves
1 c of pumpkin puree ( you can also use sweet potato or butternut squash as well)
1/3 c agave syrup
1/2 c unsweetened rice milk
1 egg white
1 tbsp sunflower oil
1 tsp vanilla extract

preheat oven to 350 and spray doughnut pan with nonstick spray
In a large bowel, mix the pumpkin and all of the wet ingredients together until smooth. In a separate bowl mix the dry ingredients together and slowly add them to the wet ingredients. Pour into the doughnut molds and Bake for 20-25 min or until a toothpick comes out clean.
Let cool on a rack and serve dusted with powdered sugar . They are so good and low in fat and sugar. Enjoy!!
Oh, and if you don't have a doughnut mold, Joann's has them right now for 12.99. You can also use this recipe for muffins.
