Can't Sleep

I can't believe I am up at 4am. Riley woke me up because he had to go potty and like always, I can't fall back asleep. So I guess it actually gives me time to post since I can't seem to find the time anymore. Today is my last gardening class. It's actually not a class, we are having a potluck party. Riley enjoyed going out to the farm last week so much that he is coming with me. I am making Frank an apple pie as a thank you for offering the first ever organic gardening class in Naples, and I am making some roasted root vegetables for the party. So I guess I have to get up early anyway. This week is going to be so busy! I have 14 people coming to our house on Friday so I will be cooking all week. After the farm Riley and I will be going to Whole Foods to do our shopping. Then on Monday we head to Frank's for our 20lb organic turkey, a.k.a. The Big Bad Turkey. Monday is also our Christmas cookie making day. Riley and I will have our aprons on, our Josh Grobin on, our hot chocolate on, and maybe even a little Polar Express on.


This week has consisted of me stalking our mailbox for our Immigration approval for Bee. I really just want it before the end of the year. It has been 4 weeks and it's driving me nuts. It has been wonderful, however, getting all these pictures of little Korean faces on Christmas cards. Our second care package was just delivered this week by my friend Audrey who is in Korea right now meeting her son. Thank you Audrey! We have another one scheduled to be delivered in January so we hope maybe we will get some new pictures. It is the one thing I want for Christmas. I have been praying so hard for it every night.


I am also in the process of setting up my Etsy store. I am really excited about it. I named it "Lil Bee Bums". At some point I have to make time to finish my healthy kids cookbook. I'm pretty sure it will end up being a vegan or vegetarian cookbook since my kid doesn't eat meat and we plan to raise Bee that way as well . I have also been thinking about taking my blog private once Bee arrives. Once I do that I will start a second blog that will be public and all about organic gardening, healthy cooking , and other fun stuff. I love that people all over the world read my blog but it also makes me a little nervous since there is so much info on our kids and our family. I have also started to plan my baby shower with my husband. I registered on Amazon.com and have a Korean menu planned that most definitely will include some Bulgogi. I can't wait! I only wish my friend Sue could come. Hint Hint..... ( I have an extra room that's free !)


And last but not least I am really excited for Christmas this year. Riley is finally at the age where he can enjoy it. He enjoyed it last year , but this year is definitely going to be different. The present he is most excited about is a present wrapped in pink Santa paper under the tree that has a tag that reads: For-My Big Brother Love, Ashley . It is a big one, the first thing he asked for and the most consistent thing he asked for. We wanted the big one to come from her so that he would be extra excited about her coming. He still has the car that Cameron gave him and he talks about it all the time. And let's not forget about Santa. Riley has not wanted anything to do with Santa for 2 years, but a friend of ours sent us this email that you can customize and it's a video message from Santa. It looks totally authentic. We used it for Riley and the next day he went and sat on Santa's lap, no hesitation. He gave Santa a hug and told him what he wanted and then when Santa gave him a penguin he wouldn't leave until he could tell Santa thank you. What a difference. What a packed post! I'm the same way - once I'm up, I'm up. At least you were productive!
You cookie-baking day sounds soooo fun! Enjoy it!
I know the pain of mailbox-stalking. We all do :) Hang in there and it'll come.
I absolutely LOVE the idea of giving Riley a gift from his little sister!!! What a fabulous idea. You'll have to tell us all how he likes it, whatever it is!

i sooooo want to come! hmmm. maybe i'll start looking at plane tickets and i can get a good deal for C and me!

i can't wait to see what Ashley got for Riley! that's a wonderful idea!

if i don't talk to you before - have a wonderful Christmas and have fun baking and cooking! i have been making tons of fudge and cookies and i have more to make next week!

When do you hope to travel? We are waiting for our LOA amd then our TA. We hope to go to China in March.
I also hope to get an update with photos before Christmas. That would be the best.
