Healthy Recipe Tuesday

Yesterday I started my second round of P90X after 2 weeks off and I am really sore today. However it felt so good to get back into it. I really felt yucky the 2 weeks I didn't workout, and I wasn't eating very good either. What a difference a healthy diet and exercise makes. I have to say that for all of you moms out there that think you can only have a flat tummy again by having surgery, you are wrong. This program will do it. It is really tough, but if you stick with it the results are amazing. For the first time in 5 years I'm wearing a 2 piece bikini and loving it. I have so much energy and don't get winded after running upstairs to get something. I feel awesome! So if you have the will power, do it.


There is no way we could have gotten through the 90 days without Jason's Deli. When you are eating really healthy it's hard to find a restaurant that serves healthy food. I would always go on a restaurant's website before we went out to eat and look up the nutritional info to see what we could eat. And it was scary to actually find out what we had been eating there. Jason's Deli worked for us because they use a lot of organic ingredients , have organic peanut butter sandwiches for Riley, organic spinach and dressing on the salad bar, and lots of healthy items on the menu. So it was the place we went to every Sunday after church. And now I found that they have a poll on their website asking people if they want them to stop selling sodas made with high fructose corn syrup. The result so far is 68% say yes to stop selling them and only selling drinks made with cane sugar. AWESOME!!!! The cookbook today is actually my new favorite magazine.





Clean Eating magazine has so many yummy recipes and tips on how to eat a clean healthy diet. There are limited number of clean cookbooks so I was very happy to have found this. And even more excited about this issue, as it has a complete clean Thanksgiving meal in it. So we are going to be able to have a yummy, healthy Thanksgiving this year. Woohooo!!! We started buying organic turkeys 2 years ago, a bit pricey, but well worth the money. They actually taste better. I usually don't get compliments on the turkey because it is just Turkey, but the first year I bought an organic one everyone mentioned how wonderful it tasted.


Today's recipe is Riley's chocolate pudding recipe. It is made with avocados instead of cream and eggs. Every time we go to the grocery store and Riley sees and avocado he always wants to get one so I will make this for him.


Chocolate Pudding
2 tsp coconut oil
1 ripe avocado
1/3 cup agave syrup (you could also use 1/2-1 c powered sugar if you didn't like the taste of agave)
1/4 c of cocoa powder or carob powder
1 tsp vanilla
2 Tbsp cornstarch


process the avocado until smooth and creamy in a food processor.
In a small saucepan heat coconut oil over med low heat , then add the avocado.
After a minute or so add the cocoa powder, agave, and vanilla and stir for another minute or so.
Take off the heat and add the cornstarch. Mix thoroughly. Put into small cups and refrigerate for an hour before serving. Enjoy!!!

You guys inspired us, and we started Power 90 last week (we aren't ready for PX90). It's very hard, but it a great feeling.

Wow! You are awesome, but I have no idea what PX90 is. I am definitely going to try the avacado pudding. My boys love them anyway, and I never knew you could make chocolate pudding out of them!
