
Ya I know it's Thursday, but I made these muffins this morning and they were so good so I had to post the recipe.
Banana Nut Muffins
1 c whole wheat pastry flour
1/2 c AP flour
1/2 c chopped walnuts
1/4 c wheat germ
1 1/2 tsp baking soda
1/4 tsp salt
2 tsp cinnamon
1/2 tsp nutmeg
3 tbsp yogurt
1 large egg
2 or 3 ripe bananas mashed
1/3 c unsweetened applesauce
3 tbsp agave syrup
2 tbsp safflower oil
Topping:
2 tbsp chopped walnuts
1 tsp cinnamon
2 tsp brown sugar
1 tbsp wheat germ
Preheat oven to 350 degrees.
Mix dry ingredients and wet ingredients separately and then mix together. Fold in walnuts. Mix topping together and sprinkle on top. Bake for 20 minutes. Enjoy!
And here are some substitution ideas to make your baked goods more healthy.
To substitute for sugar, use agave syrup. Just use 1/3 of the total amount of sugar and decrease the oven temp by 25 degrees. Agave syrup is a natural unrefined sweetener. It has the same amount of sugar and calories as table sugar, but you use much less. We use this in place of maple syrup on our pancakes. It is very sweet and is made from a cactus.

To decrease the amount of oil, use 2 tbsp of safflower oil or organic canola oil and substitute the remaining oil for unsweetened applesauce or a pureed veggie like sweet potatoes or butternut squash.
